To Begin...

  • Roast boudain of wild rabbit, carrot and cumin puree, garlic confit, pea and tomato salsa
  • Saffron and cream of swede soup served with soft butter & selection of warm breads
  • Terrine of pheasant and black pudding, toast thins, red onion and Arran grain mustard marmalade, natural jus
  • Laphroig and citrus cured salmon, toasted croutes, lemon and capers, herb fromage blanc

To Follow...

  • Chicken supreme wrapped in Ayrshire bacon, olive oil fondants with wild mushrooms, roast beetroot, artichoke puree and pan jus
  • Roast duck breast, confit of leg tartlette with caramelised fig, puy lentils
  • Hand cut sirloin steak garni, country house style chips, roasted tomato, herb mustard
  • Butternut squash risotto, aged balsamic and rocket and melting goat cheese
  • Boned and rolled local oxtail wrapped in Parma ham, confit potato and sautéed kale
